Chinese Fried Rice - Instant

1 - 1/2 cups rice
3 slices bacon, chopped
1 - 1/2 cups water
2 tbs soy sauce
2 eggs, slightly beaten
3/4 cup onion, chopped
1/2 cup green pepper, chopped
1/2 cup turkey, chopped
1/2 cup celery, chopped

Prepare rice according to package directions. Set aside. In a skillet or wok, cook bacon until brown, but not overly crisp. When bacon is done, remove from pan. Pour off all but 1 tablespoon of fat. In fat, saute onions, peppers and celery until limp/opaque.

Add cooked rice and soy sauce. Saute until rice begins to brown. Push rice to side. Add egg on empty side of pan and scramble. When egg is soft scrambled, add turkey and bacon bits. Saute for about 5 minutes or until heated thoroughly.

Add more soy sauce to taste.
